Had a migraine last night so slept early and missed dinner. Boy was I hungry this morning. On a good note, my migraine eased off. And when I got to the kitchen this morning my aunt managed to buy some bananas from the market. Hurray!

So before losing momentum I decided today’s the day I’d put the coconut flour I bought online some good use. I browsed through recipes in Pinterest and decided to just wing it.

First I mixed these wet ingredients together in a bowl:

  • 4 medium eggs (organic, free range)
  • 1 tsp vanilla extract
  • 1/4 cup melted butter
  • 2 medium bananas, mashed

Then in another bowl I mixed these dry ingredients:

  • 1/4 cup organic coconut flour
  • 3 tbsp erythritol
  • 1/2 tsp baking powder

Honestly I can’t remember if that was all 😬. I started my oven toaster at maximum temperature while I mixed the wet and dry ingredients. Then I lined up my muffin tray with muffin paper, scooped my batter in each and topped them with cocoa nibs and sliced almond nuts. I let them bake in the oven toaster for about 30 minutes and this is how they turned out. And hey, they’re quite alright. I’m enjoying one with coffee right now!

      The fam finished it 😀 im still getting the hang of coconut flour’s taste so good thing that the bananas overpowered it
